Soft Pretzels

2 - 16 oz. loaves frozen bread dough
1 egg white, slightly beaten
1 teaspoon water
Coarse salt

Separate thawed bread into 24 - 1 1/2" balls
Roll each ball into a rope 14 1/2" long
Have children plan and design pretzel shapes (letters or numerals)
Put pretzels one inch apart on greased cookie sheet
Let stand for 20 minutes and brush with combined egg white and water
Sprinkle with coarse salt
Place a shallow pan containing 1" of boiling water on bottom rack of oven
Bake pretzels at 350 degrees on rack above water for 20 minutes or until golden brown


PepperMint Ice Cream

3 lb. coffee can with plastic cover
1 lb. coffee can with plastic cover
Rock salt
Crushed ice
2 cups whipping cream
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
Red food coloring
Crushed peppermint stick (about 3 T)

Place 1 lb. can in center of 3 lb can
Fill 1 lb. can with ice cream ingredients
Layer crushed ice and rock salt around the small 1 lb. can
Cover both with their plastic lids
Sit in a circle on floor and roll the can back and forth for about 15 minutes


Rice Krispie Bars

6 cups Kelloggs Rice Krispies
1 bag of white marshmallows
3 tablespoons butter or margarine
No-stick cooking spray

Melt the margarine in a no-stick pan and add the entire bag of marshmallows
Stir over medium heat until the marshmallows have completely melted
Add Rice Krispies and mix together well
Pour mixture into a 9" x 13" pan that has been greased or sprayed with no-stick cooking spray
Use a baggie that has been sprayed with no-stick spray to spread and flatten mixture
Cut into squares when cool
Kids love making and eating these easy treats!


GingerBead Men

1/2 cup shortening
1 egg
1/2 cup brown sugar
1 1/2 cup flour
1 pkg. instant butterscotch pudding mix
1 1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
Favorite frosting
Raisins & candies
Cookie cutter

Mix together egg, shortening, and brown sugar
Add remaining ingredients
Roll out dough and cut into gingerbread men shapes with a cookie cutter
Bake for 10 minutes at 350 degrees
Decorate men using favorite frosting and candies
It's fun to make these after reading the classic tale of The Gingerbread Man
Children like this recipe because the gingerbread is sweeter and chewier than the traditional molasses cookies


Quick Pizza Pies

1 - 10oz. can Hungry Jack Refrigerated Big Flaky Biscuits
1 - 10 oz. can pizza sauce
1/4 to 1/2 tsp. dried oregano
8 oz. pkg. sliced pepperoni
1/2 lb. ground beef, browned and drained
4 oz. (1 c.) shredded mozzarella cheese
2 T parmesan cheese
Heat oven to 400°
Lightly grease cookie sheet. Separate dough into 10 biscuits
Press or roll each into a 5 inch circle, forcing 1/4 inch rim around outside edge
Spread 2 T sauce just to edges of pizza
Sprinkle each with small amount of oregano
Top with pepperoni, ground beef and cheeses
Bake at for 12-15 minutes until crust is golden brown and cheese is melted
Remove from cookie sheet
Makes 10 pizzas


Finger Jello

1 pkg. jello (any flavor or size) water
Add 1/2 the amount of water recommended on the package and put in the refrigerator to set
When solid, cut into squares and children can eat with their fingers


SnowBalls

1 cup butter
1/4 cup powdered sugar
1 tsp. vanilla 2 c. flour
1 cup chopped nuts
Cream butter and sugar; add vanilla and flour and mix well
Fold in chopped nuts
Shape into small balls on ungreased cookie sheet
Bake for 10-15 minutes at 350 degrees
Roll in powdered sugar while warm
Makes about 3 dozen cookies


Easy HomeMade Ice Cream With Oreos

3 egg yolks
1 - 14 oz. can sweetened condensed milk
2 c. whipping cream, whipped 2 T water
4 tsp. vanilla
1 c. coarsely crushed Oreo cookies
In a large bowl, beat egg yolks; stir in sweetened, condensed milk, water and vanilla
Fold in cookies and whipped cream
Pour into aluminium foil-lined 9 x 5 loaf pan or other 2-quart container
Cover; freeze 6 hours or until firm
Scoop ice cream from pan or peel off foil and slice


Turtles

1 large can chow mein noodles
1 - 12 oz. pkg. chocolate chips
1 - 12 oz. pkg. butterscotch chips
Melt both packages of chips in a double boiler
When chips are melted, turn down heat
Add the noodles slowly, making sure you stir carefully and well
Drop by teaspoonfuls onto waxed paper-lined cookie sheets
Cool in the refrigerator for at least an hour


Skeleton Bone Cookies

4 egg whites
1 teaspoon grated orange peel
1 3/4 cups sugar
1/2 teaspon baking powder
1 3/4 cups flour
1 1/2 cups salted almonds

With an electric mixer on medium speed, beat egg whites and sugar with orange peel and baking powder until blended
Gradually add nuts and flour, beating until mixture is thoroughly mixed
Cover and chill until firm enough to handle, at least 1 hour or up to 1 day

Lightly flour your hands and pinch off a 3 tb size piece of dough
On a lightly floured board, use the palms of both hands to evenly roll an 8 inch long rope
Cut rope in half; roll each half out again to 8 inches
Fold 1 inch of each end back onto rope; pinch ends to make bone-end shapes
Repeat to shape all the dough
Place bones 1 inch apart on buttered and flour-dusted 12 x 15 inch baking sheets
Bake in a 325F oven until cookies are lightly browned on bottoms, about 20 minutes


Oatmeal Chocolate-Chip Cookies

Ingredients
1 cup margarine, cold
1 1/2 cups tightly packed brown sugar
1 cup table sugar
1 ripe, mashed banana
If the banana peel isn't spotted black
Cover the mashed banana with the juice of half a lemon for about 15 minutes before incorporating it into the mix
3, 4, or 5 teaspoons vanilla (be generous)
2 tablespoons water or soy/almond/rice drink
2 cups all-purpose or whole-wheat flour
1 teaspoon baking powder stirred into the flour for guaranteed dispersion
2 1/2 cups rolled oats (quick oats work well)
2 1/2 cups vegan chocolate chips
Method
Beat together the margarine and sugars
Electric mixers are unnecessary
Add the well-mashed banana and mix well
Then add the vanilla, then the water
The water will try to separate
Keep mixing with a figure-eight motion and add the dry ingredients, in the order above, bit by bit (say, by half-cup increments)

The final batter should be almost too dry to hold the chocolate chips
If it isn't, you should add more or less, according to the problem
Dry batter is good.
Since any chips that fall off the batter can go directly into your mouth
If the batter is too wet, the cookies will flatten while baking and turn out hard and flat

Bake them for 10 or 12 minutes in a pre-heated oven at 375 degrees Fahrenheit on an ungreased cookie sheet
Cook them longer if you prefer a hard cookie
But be aware that bananas only approximate the action of an egg in the mix
You could get cookies as hard as the cookie sheet if you aren't careful

Let them congeal on the sheet for a moment after removing them from the oven
Then cool on a plate or a wire rack
Store in an air-tight container
They taste even better after they sit overnight or in the fridge


Peach Crisp

4 or 5 fresh peaches
1 cup Grape Nuts
1 tsp. butter
1/4 cup apple juice concentrate
1 tsp. cinnamon
Peel, core and dice peaches
Place in a greased pie plate
Stir in Grape Nuts and cinnamon
Top with dabs of butter
Bake 350 for 25 minutes
Serve warm, plain, with milk or with peach yogurt on top
Makes 10-12 small servings


Fruit Leather

Peel and core 5 cups fresh frui.
Blend it in a blender
Then heat it in a sauce pan (add spices if you wish such as cinnamon, etc)
Blend a second time
Pour fruit puree onto a cookie sheet that has been spread with saran wrap
Spread the puree the best way you can
A plastic egg turner works great
Bake it in the oven at 150 for 8 hours
Apples, plums are sweet enough as they are
Try blending a ripe banana with pears, apricots and berries
When fresh fruit is non-abundant, you can use nonsweetened apple sauce
Heat it in a pan, and add some cinnamon
Then blend it in a blender and spread it on a cookie sheet which has been covered with saran wrap
For a crunchy treat, sprinkle 1 cup Grape Nuts over your fruit puree before you bake it
Results in a crunchy fruit leather that kids like


Jello Pops

3 oz. package of Jello (flavored gelatin)
1 cup hot water
2 cups any juice (should complement jello)
small (3 oz) paper cups (12)
12 craft sticks (wooden)
muffin tin

1.Boil water and mix until jello is dissolved
Add juice
2.Place paper cups in muffin tin (less spilling this way)
3.Pour mixture into cups
4.After about an hour insert sticks into cups
Freeze until solid
5.Eat.......Yummie!


P'nut Butter And AppleSauce

Spread peanut butter on whole wheat toast
Cover with warm applesauce, sprinkle with cinnamon


Orange SherBert

12 oz can orange juice concentrate
1/4 cup apple juice concentrate
1 cup non-fat powdered milk
3 1/2 cups water (2 cans full)

Blend ingredients thoroughly in a blender
Pour into a baking dish
Place in freezer
Stir thoroughly every hour for 6 to 7 hours
Makes 16-20 small cup servings


Banana Pops

Bananas
Popsicle sticks
Lemon juice
Grape Nuts

Stick banana halves into popsicle sticks
Dip bananas into a mixture of 1/2 lemon juice and 1/2 water
Roll bananas in crushed Grape Nuts, place on wax paper and freeze


Minster Banana

1 banana, for body
Peanut butter
Fresh fruit, any kind will do, cut into different shapes
Food coloring

Use peanut butter as a glue to stick different fruit shapes onto the banana to create your very own creature

Add a drop of food coloring on the fruit to give it that special color
For some added treats try using candy, M+m's, Reese's pieces, Gumi's, etc
You can also use whipcream, lowfat, and raisins
Make a party of it
Invite some friends over
Have them bring along one of the add-ons to be used
Fun, tasty and healthy


Easy Crust

1/2 tsp salt
pinch of baking powder
1 cup white flour
1/4 cup shortening
1/4 cup water
1/4 cup finely shredded cheddar cheese
Stir dry ingredients in a bowl
Cut in the shortening and then add 1/2 of the water
Stir mixture with a fork and add more water only if necessary to work in flour
Add cheese and knead together
You can use this crust for many cooking projects


Apple Pies

Roll out cheese pie crust and cut out 4" circles, squares or triangles
In a small bowl, grate up an apple that has been pared and cored
Add 1 mashed banana and a sprinkle of cinnamon
Stir together
Place a small amount of the apple mixture in the center of each pie crust piece
Have your children bring the sides together and pinch them shut
Bake for 30 minutes at 350
Let cool and then serve


Cheese Twists

Use your leftover pie crust and make cheese twists
Roll the dough out and cut into strips
Twist the strips around and bake at 350 until crust is done
Before baking, you can also brush these with an egg yolk and water mixture
Then sprinkle on some sesame or sunflower seeds
